This is the best of two different Snickerdoodle recipes that I have tried. The finished cookie is quite crunchy as opposed to the soft cookie that I have always eaten. It is from the "The Original Betty's Pies Favorite Recipes" cookbook that I got while we were in Duluth.
9 Tbsps butter
3/4 c. Sugar
1 egg
1/4 tsp salt
1 2/3c. Flour
3/4 tsp cream of tartar
1/2 tsp baking soda
1/3c. sugar
4 tsp ground cinnamon
Preheat Oven to 350 degrees
In a large mixing bowl, cream the butter and sugar.
Add the egg and mix well.
Sift the dry ingredients together and mix with the cream mixture. Roll dough in balls the size of a walnut. Mix sugar and cinnamon in a pie plate. Roll the balls in the cinnamon-sugar mixture.
Place on an ungreased cookie sheet, space 2 inches apart. Press down slightly with a glass to about 1/4 inch thick. Bake at 350 degrees until cookies are golden at the edges, about 15 min.
-Always use parchment paper when baking cookies, it makes things soooooo much easier and no sticking and if you happen to burn something.... you don't ruin your cookie sheet. :)

Window Cleaner
1/2 C. Vinager
1/4 C. Water
1 Tbsp Rubbing Alchol
5-6 drops castille soap
Mix together and put in a spray bottle and go to town. It may streak a little bit the first couple of times you use it but I have never had shinnyer windows. Way better than windex and does not smell as bad. Plus super super cheap. I'm sure you could leave out the Castille soap, I bought a thing of Murphy's Oil Soap lemon sented at Target (In the personal hygene isiles by the makeup) a couple of months ago and it still looks like there is nothing out of the bottle.

Mmmm tastes like childhood
Dinner Tonight:
1 Box Mac & Cheese
1 Can Tuna
(I also put a bite of sweet potatoe puree in to up the nutrition content)
Yum! Definetely tastes like my childhood. And it was a decently healthy meal for Bailey and I that cost? Hmmmm .33 cents + .70ish cents? Cheap! And unfortunetly we'll be eating it for lunch tom. because we have so much left. I briefly thought of rolling it into balls, then rolling in breadcrumbs for a kind of appetizer thing but who knows!
My mom and I were talking and we thought of some other add ins for a cheap box of mac & cheese:
Hamburger
Corn
Peas
Greenbeans
Cream of Mushroom Soup
Hotdogs
Mix one or more of the above and tada a sorta healthy meal (some more then others). Jump dorky I know. But everybody is trying to save money right now right? Did anyone else eat a lot of things like that growing up?

Knefla Soup - mmmmm homey goodness
Today I made Knefla Soup which I absoluetly loooovee! And it occured to me that I've never posted the recipe so here it is:
Knefla Soup:
6 Potatoes, peeled and cut into bite size peices
4 Chicken bouillion cubes
Optional: 2 onions chopped, 1 carrot pared and sliced, 1 stalk celery sliced, 1 tablespoon parsley flakes.
5 cups water
1 Teaspoon salt
pepper - to taste
1/3 cup water
1 can (13 oz) evaporated milk
Combine all ingredinets except the evaporated milk in a large pot and simmer until potatoes are tender (don't let the potatoes get overly mushy) - Add knefla. Simmer 30 min. Add evaporated Milk before serving.
Knefla (dumplings)
2 cups flour
1 egg
1 teaspoon salt
1 cup milk (regular not evaporated)
Mix all ingredients together and slowly add the milk until the dough forms. Form into long strips and cut into slightly smaller than bite size peices (they puff a little as they cook)
Making the dumplings is sticky and messy but really fun.
*Rather than using the chicken buillion cubes this time like I normally do, I made my own chicken stock. Heres how I did it.
-Left over chicken carcass
-Left over dark meat that we would no eat
-Any seasoning you want example: a couple of peppercorns, a clove of garlic, carrots, celery ect. However if you don't have any of these things it still tastes ok.
Put Chicken in a large pot, cover with water and let simmer until the chicken parts absoluetly fall apart. Then use a strainer to put the stock in a bowl and get out the gross stuff. Let it sit in the fridge overnight and then skim off the fat. Abracadabra Chicken Stock! Yup it was some work, but it was really fun, and then it has way way less sodium then the boxed variety or those chicken boullion things.

Yum Pulled Pork
Today I made Pulled Pork Sandwiches which were awesome and I am so making for the next super bowl type event that we have. It took a really long time to cook the pork roast and then shred it but was sooooooo worth it. Obviously you couldn't have it everyday but again I brag Yum! I got this recipe out of my good old Betty Crocker Cookbook that I got for a wedding gift from one of my aunts. I use it all the time. Anyway here is the recipe.
2 1/2 lb pork boneless shoulder roast
1 Tbsp Jamacian Jerk Seasoning (I couldn't find "Jamacian" seasoning anywhere but finally at Walmart I found Caribean Jerk Seasoning, close enough Jamacia is in the Caribean)
1/4 teaspoon dried thyme leaves
1 medium onion, chopped (I hate onions so I just shook a little bit of onion powder in)
1 Cup Cola (I used Pepsi because that is the only Cola I drink besides Diet Coke)
2 Cups barbecue sauce (I used Famous Daves Rich & Sassy)
8 Sandwich Buns or flour tortillas ( I ate it both ways and both ways delicious)
1. If pork comes in netting or is tied, do not remove. Spray 3 1/2 to 6 Quart slow cooker with cooking spray. Rub jerk seasoning over pork; sprinkle w/ thyme. Place Pork in cooker. Sprinkle with onion. Pour Cola over Pork
2. Cover and cook on low heat setting 8 to 10 hours ( I did 6 hrs on low 1 on high)
3. Remove Pork from cooker; place on cutting board. Remove juices from cooker and reserve. Remove netting or strings from pork. Use 2 forks to pull pork into shreds. Return pork to cooker. Stir in barbecue sauce and 1/2 cup of reserved juices. Increase heat setting to High. Cover and cook 30-45 min or until heated through.
4. Spoon pork onto buns. In 2 quart saucepan, heat remaining juices to boiling, serve with sandwhiches for dipping if desired.
Add Note: I also strained the juices to catch any nasty gunk that was floating around in it, just because I'm a visual person and it made it look gross. We also did not dunk the sandwiches into the juice but I'm sure it would taste alright.
P.S. Bailey has a red raised spot on her gums exactly where Ben and I said she was teething (take that nonbelieving us doctors, it looks like she is getting one of her bottom eye teeth and that is not one of the teeth that a baby usually gets first.)
Plus, on the note of Bailey being on a schedule today she was awake, I kid you not from 8 a.m to well after 2p.m and look tierd the whole time, wasn't really cranky acting but refused to close her eyes and go to sleep. Babies!

Sweet Potatoe Souffle
Ben and I tried Sweet Potatoe Souffle tonight, I had found it on the web and it claimed it could be a main dish, I don't think it is a main dish but it was really good. Lots of sugar, which is why I think it is a main dish sort of thing.
Anyway here is the recipe:
Ingredients:
nonstick cooking spray
2 Cups mashed sweet potatoes (which I got by peeling and steaming 2 large sweet potatoes for 20 minutes)
3/4 cup granulated sugar
4 egg whites
1/4 cup 2 percent milk
2 teaspoons cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
Topping:
1/2 cup brown sugar
4 Tablespoons light butter
3 tablespoons flour
1 8 ounce can crushed pinapple, drained
Directions:
Preheat oven to 350 degrees, spray a souffle or casserole dish with nonstick cooking spray.
In a large bowl, using an electric mixer on the lowest setting, beat together the sweet potatoes and sugar. Add egg whites, cornstarch, cinnamon and vanilla. Beat until fluffy and lump-free. Pour into prepared dish.
In a small microwave safe bowl, combine the brown sugar and butter melt on high until melted. 30-45 seconds. Stir in the flour and pineapple. Drizzle the topping over the sweet potatoe mixture.
Bake 30-35 minutes until bubbly and golden. Serve immedately
Serves 8
Prep time: 15 min (ha easily 20-25)
Calories 240
3 Grams of fat
3.7 grams of protein
It didn't say how many grams of sugar per serving but you can bet its alot. I had never eaten sweet potatoes before but am definetly going to be willing to try them in other ways as well. Hmmmmm maybe Sweet Potatoes Fries?

Pumpkin Cream Cheese Muffins
INGREDIENTS
1 (8 ounce) package cream cheese
1 egg
1 teaspoon vanilla extract
3 tablespoons brown sugar
4 1/2 tablespoons all-purpose flour
5 tablespoons white sugar
3/4 teaspoon ground cinnamon
3 tablespoons butter
3 tablespoons chopped pecans
2 1/2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/3 cups canned pumpkin
1/3 cup olive oil
2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 18 muffin cups, or use paper liners.
To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, then set aside.
For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.
For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
Place pumpkin mixture in muffin cups about 1/2 full.
Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup.
Sprinkle on the streusel topping.
Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes.
Note: I found this on an internet site and made them today. They smell amazing when they are baking, taste great, and look kind of pretty too. Plus they are pretty perfect for the first official day of fall!

2 pounds buttercup squash
1 cup brown sugar, packed
1/2 cup butter, melted
2 tablespoon flour
2 teaspoon salt
2 teaspoon cinnamon
1 teaspoon nutmeg
2 baking apples, cored and cut into 1/2" slices
Preheat oven to 350 degrees. Cut squash in half. Remove seeds and fiber. Pare squash; cut into 1/2 inch slices remove skin. Stir together remaining ingredients except apple slices. Arrange squash in ungreased 9X13 baking dish. Top with apple slices. Sprinkle sugar mixture on top. Cover with foil. Bake 50-60 minutes at 350 degrees. Serves 6.
Note: You pretty much have to glob the sugar mixture onto the squash, sprinkle is hardly the word for it. Ben's family has always doubled the sauce so it is posted here reflecting twice the amounts of the original.

Waffles - the best of 3 different recipes we've tried
THE PERFECT WAFFLE
2 cups flour
1/2 teaspoon salt
2 tablespoons sugar
3 rounded teaspoons baking powder
2 eggs separated
1 1/2 cups milk
1 stick butter
melted2 T Crisco
1 Teaspoon vanilla
Sift flour and measure. Sift again with: flour, salt, baking powder.
Beat the egg yolks with the sugar, then milk, and pour slowly into dry ingredients, stirring to prevent lumps.
Stir in melted shortening, beating only until batter is mixed (some lumps will remain), then fold in the two beaten whites.
Bake each waffle on a piping hot iron approximately 4 minutes.

Saturday morning monkeys
This morning Ben forced me out of bed somewhere between 8:30 and 9ish and we made monkey bread! I searched on Cooks.com until i found the recipe that Joise and I used to make with our summer cooking class they are delicious.
Monkey Bread
4 Cans refridgerated Biscuts
1/2 C. Brown Sugar
1/2 C. White Sugar
1 C. Vanilla Ice Cream
1 Stick of Butter
You cut the biscuts into fourths and roll them in cinnimon and sugar then put them in a foil lined 9 X 13 baking pan.
Boil together Sugars, Butter and Ice Cream .
Pour over biscuts. Bake at 350 degrees for around 30 min.
Flip out onto cookie sheet or plate and enjoy!

Puppy chow
Tonight in the few hours that ben and I got to spend together, we made puppy chow which was so yummy and then we sat on the living room floor (because i wouldn't let us eat it on the white couch) and watched our recorded episode of Gilmore Girls from tonight. I love that show, I know its cheezy but its soooooo funny.
Here is the recipe for puppy chow taken from cooks.com (my cookbook of choice any day) :

What can ya do? I never knew when I got hired there that the photo studio would all of a sudden only have 4 employees including me. Everyone that works at the studio has to work like every damn weekend. So I'm not trying to feel sorry for myself but I'm not going to beat myself up over something for which I have no control either. I make more money an hour at sears and Jan refuses to pay me more so..... I don't feel sorry at all except for the other employees at comfort inn that are having to work every weekend too. sigh.... everyone's job sucks I wonder if there really are people in the world that actually love their jobs. Even people that have their dream job probably bitch from time to time.

I don't feel sorry at all except for the other employees at comfort inn that are having to work every weekend too. sigh.... everyone's job sucks I wonder if there really are people in the world that actually love their jobs. Even people that have their dream job probably bitch from time to time.
